Casu Martzu Riot
Forlimpopoli, Pellegrino Artusi's hometown, in the event which is held annually in his memory, the Artusiana Feast, we have begun the
critical food cycle.
The first food critic that we examined was a well-known Casu Martzu (rotten cheese), better known as the cheese with worms,
which was included among the ingredients of a recipe that included the revival of an ancient pastoral tradition of the Sardinian's
flat bread pane frattau.
In collaboration with an archaeological-gastronome that made the recipe and a amateur cook who has tried the execution by his hand,
we participated in the selection of an international competition for food, named Premio Marietta, entering into the top five finalists.
Thus we have, officially, for the first time in history, a recipe which includes a food that is still considered illegal by the European
dairy legislation, which since 1962 prohibits the production and sales with the excuse of being against the hygienic rules.
With emphasis on the character of the censorship laws in force, we have shown the paradox that exists between a non-standard
petrochemical industry, but legalized, and a seasonal cheese, which for over fifty years, despite its formation process is encoded
by a centuries-old natural tradition, it is prohibited by law.
